I just tested this out and you're right - they don't show up. Somehow I'm not sure that was intentional since there are CSS rules for captions in the stylesheet. I would recommend opening a ticket with StudioPress support since this appears to be some kind of bug in the theme. Please post back and let us know what they say!

Then I see this in the post editor:
And this on the front end:
So basically you can't add the image, then click and try to add the caption. You have to do it before it's inserted into the post editor. Still weird and not the way it should work, but at least it's a workaround for now.

Looking at it further, I was using 'featured image' for each post, and captions don't appear for those (same in the demo), and not 'insert media' (where they do, with your proviso above).
I used featured images because it meant that the featured post widgets worked correctly, with h2 headings alongside the right size images (albeit without captions). However, I then found that the featured images weren't then appearing at all in single posts: I managed to fix that with a code snippet ( http://wpsites.net/web-design/display-featured-image-before-or-after-entry-title-on-single-posts-pages/ ) - though I'm not sure if that was the thing to do...and again, no captions.
My ideal is to be able to use featured images and captions with the widgets so the homepage looks right, and featured images and captions on the post pages. Am I barking up the wrong tree here? (I'm certainly confused!)

By default, Genesis will take the first post image and use it as the featured image, so you could use a post image with a caption, which would be in your single post, but that same image would also be your featured image (albeit adjusted for the size you specified for that space).
Given that, plus the caption snippet Andrea provided, you might be able to get what you need, using a post image instead of the actual Feature Image meta box. Just be aware that if you ever want to use a featured image that's different from the post image, you have to do both.

Sadly that code snippet didn't work at all for me: captions didn't appear on any featured images, and in addition it mucked around with my homepage: sidebar widgets started appearing in the 'home top' position.
Summer, you're right about that first post image being taken as the featured image, and captions do then appear; but it's not treated in the same way as a featured image, unfortunately. It places the heading before the image in each widget, rather than displaying content alongside the image (home top) or below (Home Middle Left). It also doesn't respect the image sizes set for the 'Show featured image' dropdown, so it's not possible to display one full width, for example.
Grrrr! What I want *seems* so simple in theory, but also so hard in practice!?
