I am moving one of my WP sites to the same server as my main website (don't ask why they are on two different servers.)

I exported the content to the new server. It literally has the URL
new.xxxmyserver.com where the old site is xxxmyserver.com
I noticed that all the photos are uploaded with the new.url followed by /wp-content/uploads/2021/03/xxx.jpg

Once I switch the DNS to point to the new server and remove the "new.xxx" will the relative urls for the media revert to the xxx.com?

It depends on how it was set up. If they are two separate websites moving them from one server to the other doesn't change the domain name. They will still be two separate websites.

this was setup as a subdomain, because I'm already paying for a hosting plan for my main website. But I had two servers. This way it's all in one place.

But since it was small without a ton of data, I used the WP Import tool to simply export a copy from the old server to the new site.

Then we can rename it from new.xyz.com to simply xyz.com
-my questions is - will all the relative URLs
    change, even the uploaded photos?

No, merely changing new.xyz.com to xyz.com will not change that.

If you have content in the site that's new.xyz.com and you uploaded the images to xyz.com - then in the body of the content new.xyz.com could need to be changed manually, or you would do a Search/Replace via a plugin that says, "look for new.xyz.com and replace that with xyz.com. But those images need to be in the correct file folders on xyz.com for the images to display.

When I look into the wp-content file (because I want to backup the photos in case something goes wrong, I see about 50 different temp files that are type text/x-generic. Can these be removed?

I can't say anything about those types of files. That's more a WordPress related question and not theme related, as it the entire subject matter really. You just have to make sure that the mapping of the URLs inside the pages/posts still lead over to the destination of their respective images.
