    I am looking to change my homepage layout to Sidebar/Content/Sidebar.

    I removed this line of code:
    // Force content-sidebar layout setting

    add_filter( 'genesis_site_layout', '__genesis_return_content_sidebar' );

    I was then able to have the layout be sidebar/content, but it will not change to sidebar/content/sidebar.

    Can someone assist with a idea of how to fix?

    Have you tried changing the "return"?
    return_content_sidebar does not force sidebar/content/sidebar

    //* Force content-sidebar-sidebar layout setting
    add_filter( 'genesis_pre_get_option_site_layout', '__genesis_return_content_sidebar_sidebar' );
