Hey, I am currently having trouble putting in a custom logo into my genesis education theme. When I go to Genesis>Theme Setting, there is no selection box for dynamic text versus custom logo. Anybody know what to do, would appreciate any advice. Thanks!

With Education, at least with the current version of it, 2.0.1, you add your logo under the "Header" menu, under "Appearance". Have you tried there?

Yes, but for some reason the header text keeps displaying over my image even when I uncheck the "Show header text with your image" selection box.

If you haven't already solved your problem you may need to try the following:

In wwwroot open your wp-content folder.
    Open Themes folder.
    Open Education folder.
    Open Images folder.
Look for the image file which is probably called "logo.png".
    Rename the file
    Example: logoOLD.png or logo1.png

You can always go back in and rename the file to it's original name so that the theme's CSS can find the image again if you need it.
