    (I was going to put this in 'Design Tips and Tricks' but I see it's closed.)

    Two related questions:

    1) Is there any way to use the eNews Extended plugin to pipe a subscriber's email address to me directly? (It's a tricky internet search and I couldn't find anything.)

    2) If not, is there any other way to do this without a plugin or third-party service?

    Ideally I would just like to be notified that someone wants email notification of new posts, then I can add that to a manual email list and send that out on publication. (And yeah I know that's weird but I'm going pretty minimalist.)

    Well, with newsletter subscriptions you need to provide them with a way to opt-in and a way to opt-out. Offering a space for anyone to put their email address into opens you up to being spammed. That's why we encourage people to use newsletter programs that provide a "double opt-in". When they enter their email address, they receive an email at that email address where they click the button to verify that it's them who added the email address.

    If you leave it open in the manner you are speaking - that would allow anyone to enter 100 email addresses of 100 people who did not subscribe themselves to your newsletter.

    Going minimalistic is fine, but you need to pay particular attention to the ramifications of what can happen after the email address has been entered.

    Oh and to answer your question, no Genesis eNews Extended cannot work in that manner.
