Just updated to WordPress 3.9.1. Ran Genesis 2.1.0 update. "Unpacking the update..., Installing the latest version..., Removing the old version of the theme..., Could not remove the old theme., Theme update failed." How do I install the update now? Ran all my updates (WordPress, Genesis, plugins) on my development server and everything updated without any issues. Now I can't get the update to run on my Production server. Any suggestions?

I went into my wp-content folder and renamed the Genesis folder. I logged into StudioPress and downloaded the Genesis 2.1.0 folder to my computer Downloads folder. I then copied the Genesis 2.1.0 folder and pasted it into my wp-content folder (themes). When I went back into WordPress it was running Genesis 2.1.0. Is this an acceptable way of updating the Genesis since I couldn't get the WordPress Dashboard to run the update?

Sounds like that worked. I normally compress (zip) the downloaded theme and then upload it though WordPress theme installer.
