I switched from custom-made StudioPress theme to Generate theme and now all the featured images seem to be a different size.
I tested changing one image to the right dimension (610x407), then uploading it to the server and it seemed to work.
Does this mean I have to this change/upload to each blog post?
Unfortunately I'm unable to give you the URL as the site is under maintenance right now.
Install and run the Regenerate Thumbnails plugin.

Actually, what happens when I add new blog posts to my blog - do I have to run this plugin again?
TImo: No, you only need to run the regenerate thumbnails if you change your image sizes (either by adding a new theme, changing your featured image sizes, or changing the sizes of images in your media settings).
New posts/images added to your site will adjust to your theme's settings.
