How can I have one page that does not display the page title?

You could try this plugin, it's by Bill Erickson.

Genesis Title Toggle

If you prefer not to use a plugin you could try adding this to your functions.php;

add_action('get_header', 'remove_page_titles');
function remove_page_titles() {
if (is_page(65)) {
remove_action('genesis_post_title', 'genesis_do_post_title');
}
}

Replacing 65 with your page ID.
