HI guys I am setting up the Generate theme on a site and right now I have a Mailchimp code inserted into the Generate Box Plugin. I can't get it to look right and need advice.

I am wondering if I can do this better with Gravity Forms. If so is there a tutorial?

There're other options to this approch, Brandon Kraft along with Brian Gardner, has some very helpful tutorials on how to setup your signup forms, try this link to read more about it. http://www.studiopress.com/news/genesis-enews-extended-plugin.htm

I would love to use Mailchimp here instead of Feedburner. I have Premise and Gravity Forms installed on the site if that helps any.

You would need to strip out all the bloated code from the MC form code.

Try this code and replace the form action url with your own

Or you could use Feedburner and remove the HTML link to Feedburner.
