    Is there a way to code a post / page and add a custom redirect URL so that the link will open a new tab?

    Perhaps you could elaborate what your use case is especially

    a custom redirect URL

    is a little unclear what you are wanting to happen

    In the "Theme Settings" section when you create a new post there is a field for "Custom Redirect URL"

    I'm wondering if there is a way that you can set that to open in a different window / tab

    The short answer is no.

    Genesis SEO uses wp_redirect, which does a PHP header redirect, and (as far as I know) there is no way to open a new tab, as it is a genuine redirect.

    You should be able to achieve what you want with javascript but not through the SEO plugin.
