    I am trying to figure out how to create a completely custom layout that includes Advanced Custom Fields for the default category.php template in a Genesis child theme. Any tips and code examples would be appreciated.

    Use the WorPress Template Hierarchy to name the file

    And use get_post_meta in your template file

    I am using the Advanced custom fields plugin to create the custom fields and I want to have a category.php template in my child theme with a completely custom layout and I want control over what pieces of content are displayed.

    Here's an example of a custom category template file.

    Custom layout snippets

    That gives you everything you need to have a go at coding a custom category template with custom field and a custom layout.

    You may also need to use ACF specific functions for custom fields however its best to use WordPress functions if you can.
