A question I keep asking myself is - Is there a need to create additional custom page templates?
I recently learnt about creating Custom Post Types and Custom Fields and also using Labels (and other customisations in Genesis Extender) - all for filtering and organising our content and how we want that information to display on pages or posts.
Many are quick to recommend creating your own page templates - but in the past when I have done this and carried out updates on the sites, I have lost information. As I am about to start building out a new site, I want to start with the right approach and like the idea of using the different customisation options available.
Currently, what would be a 'best practice' approach, to determine if creating custom template pages/posts are still necessary when there are so many customisable options within a page or post itself, for how we display the information on a page.
It would help to get some professional thoughts on this before I get too deep into building out my new site.
Many thanks

Generally, you would create templates for:
Landing Page
Home Page
Front PagePage templates contain code that is only executed on that specific template.

My purpose for asking this, I am looking to build a website that is similar to this site http://www.scorchlondon.co.uk.
I certainly don't have as much content as they do, but the type of content and how the website loads and displays the information is exactly what I need to try and build - as over time, I will end up with as much content.I know that using CPT for organising all the content is going to be a good way to build up a database of information on the site - but I am trying to determine if I need to create page/post templates for each section on the website - 'STAFF', 'VIDEO PORTFOLIO', 'PROJECTS' etc … or should I just create a post for each element with all its customisations built in and use the default pages that ship with Exec Pro to create each page as is.
Each time you create a new Page in Exec Pro - it can become unique and customisable using various plugins, widgets and Genesis Extender. In the past I would have just created a Page Template to do such things - so I am trying to understand why the need for additional page templates?
Sorry if I am a bit vague - I have been buried in reading tutorials, getting up to speed with many of the new features etc to determine the best way forward when building this site as I have done one before and it got completely wiped when I updated it and changed theme - so I want to make sure I have a better structure set up this time.
Thanks for taking the time to reply - much appreciated as my brain is fried from reading so much information and trying to make sense of everything.
