    I have setup a page with a blog template, I'll call it my special blog page, how do I restrict this page so it only shows posts with a certain category?

    Right now any post shows up in the page and that's not really what I want, there is another page that I want to use as a catchall except for those mention in the special blog.

    Link to the page please.

    You can use the Genesis > Settings > Blog Template to control which categories are displayed.
