I'm trying to activate the new AMP function on my blog. However when I run the Debug with Chrome Console (for example https://www.fabionodariphoto.com/wrp/tokyo-in-5-giorni/amp/#development=1) I get a lot of errors...
Is it due to the Theme?

No, the plugin is failing, barring anything to be revealed by the plugin author.

    Possibly a cacheing issue?

Thank you.. You were right. The problem was with CSS and JS minify. When I disabled the minify settings the AMP validated without any error.
