    I have added a custom field for a subheader and I would like it to appear directly under the post title. I'm having a hard time figuring out what hook to use.

    Try this hook

    add_action( 'genesis_entry_header', 'genesis_do_post_sub_title', 11 );
    function genesis_do_post_sub_title() {
     //* ADD YOUR CODE HERE
    }
