In this tutorial, in the second code snippet there is - add_action ( 'genesis_entry_header', 'sk_show_featured_image_home' );
you can use priority to set that image on top of the title, instead of beneath it like - add_action ( 'genesis_entry_header', 'sk_show_featured_image_home', 9 );PS. Check priority from 1 to 10 as am not sure which one leads to the result.
Also, without looking into the code, for the second part, the easiest way would be to hide the content vai css.

vajrasarMemberFirst, I don't understand why would you make a child theme of Parallex Pro, which already is a child theme of Genesis.
Anyways, in Genesis you work with hooks, not with individual files everytime. So, to put a code in header section you can either use add_action method or simply install 'Genesis Simple Hooks' plugin.
Once you install the plugin, navigate to Genesis -> Simple Hooks. There you will see all the hooks present in Genesis. Search for genesis_header hook and put your code there.
Don't forget to wrap the code in <?php ?> if it is php and tick mark use php on this hook option. Save the settings when you are done.

vajrasarMemberYou can edit that post from the dashboard and in the post-editor interface, on the right side you'll see the tags attached with the post. Just click the small close button on the tag that you want to delete from the post and after doing so hit - update.
If you want to remove the tag from everywhere, go to Posts -> Tags -> hover on the tag name that you want to delete and you'll see an option to delete the tag. Hit delete.

vajrasarMemberIf you are making a e-commerce portal then in 90% case you'll use woocommerce plugin and there you can choose to show product categories in sidebar (either manually or via plugins).
If you just want a website showcasing books, then you can make posts as book titles and put them in specific categories. Later, you can show those categories in sidebar (with the help of any plugin) and whenever someone will click on a category, books related to that category will be shown.

The use case is when you show an image and the excerpt is contained in the image itself rather than making room for excerpts every time someone hovers on it.

vajrasarMemberFirst, that is possible but you have to do some custom code for that. Second, with that approach your page will then resize every time someone will hover onto the title (for making room to show excerpt) unless it is done in a tooltip fashion (using JS).
