Rather than wrestle with the ordered list, it might be easier to just number each item manually and put the correct number of items into each column. Is that a possibility for what you need to do?

Is your user set up as an administrator? If you have access to Appearance > Menus, you should be able to alter the content of the menus. Have you tried this in a different browser?
Edited to add: I just noticed that your user doesn't have the ability to edit pages or posts? There should be at least one administrator user who has access to everything on the site.

That way you wouldn't have a bunch of 404s once the posts are no longer visible on the site.

Unfortunately, without a link it's difficult to say what might be causing the posts not to show, but here's my guess.
After "grid-content-limit" try adding this:
'posts_per_page' => 5,
(or whatever number you want to show)

Sorry you're having difficulty getting your landing page to display! It looks like Minimum Pro's home.php is overriding your settings for the homepage. Try renaming home.php in the theme folder to something like home-old.php and see if that gets it to display correctly. If not, post back here and I'll be glad to take another look.

Sorry you've had trouble getting help with your theme!
1) There is a file in your theme's folder called home.php - that's what is putting your posts into the Genesis grid format. To remedy this, you can rename that file to something like home-old.php and your posts will display according to your Genesis theme settings.
2) Once you've removed the grid as explained above, your featured images should show below the post title. If that doesn't happen, let us know.
3) Moving the post meta will depend on how your posts display once you've removed the grid. If you could try step 1 above and post back, I'll be glad to help you move the post meta if you still need to.

One thing you might try is adding the signature as a function so you don't have to add it manually to all your posts. (Depending on how many posts you have, you may not want to since you'd have to go back and take out the existing ones!) I use this on one of my own sites and I've never had trouble with the graphic showing up in the grid.
I added the following to functions.php (be sure to add your image URL):

If so, you may need to empty your cache to see the updated image. If you'd like to provide a link to your site, that would help with the troubleshooting process.

I haven't used Slim Jetpack but I assume it works in much the same way as the regular Jetpack plugin. You can follow this tutorial to display the sharing buttons at the top of your posts: http://my.studiopress.com/tutorials/jetpack-sharing-buttons/ (you may need to be logged into your StudioPress account to view).

In the Mindstream functions.php file, there is a section that looks like this:

What that does is remove the post title, post info, and post meta from any of the custom post types. If you remove that entire section from functions.php and save, your posts should show titles again. (If something happens and you don't like the way it looks, you can always copy and paste the code above and re-insert it into functions.php.

I usually add a subdomain to a domain I already own, install WP there, and build it "live" without it actually being on the domain I plan to use. Hope that makes sense. I'm sure others have compelling reasons for testing locally but it seems like too much extra work to me. 🙂

I had to use a TON of functions to get the grid loop working correctly, but I believe that's the one that worked specifically to put the images above the post titles. If that doesn't work, let me know and I'll keep looking.

Sorry you're having a hard time! I think (in)SPYR is very difficult to use personally - it's not indicative of all Genesis child themes for sure. I haven't used it in awhile but I believe there is a tutorial on changing the footer under the (in)SPYR section of your dashboard. I hope that helps, but if you don't find what you need, let us know and we'll keep looking.
