Thank you for your response and they all make sense but I have a follow up questions.

If I don't update the child theme to the newest theme, how will I update the theme in case there are security updates or any other critical updates? Or are the security/critical updates applied to WordPress and not child theme?

Thank you! This is what did the trick -- Genesis > Theme Settings > Content Archive

I had no idea that Content Archive had anything to do with post thumbnails.
