Anita, you totally rock! I found a workaround that seems to remove the <p> tag.

Thank you, Anita! Greatly appreciated. I adjusted the text so it is just one line and that didn't seem to impact the layout. I also deactivated the auto-optimize.

I will look into the plugin avenue as well.
