I want the default layout to be full-width for posts and pages but I want the homepage to include sidebar. How can I do this?

Try the Genesis Layouts Extra's plugin.http://wordpress.org/plugins/genesis-layout-extras/

You can also set the layout in your Genesis > Theme Settings > Default Layout and on all edit screens.

Another option is to conditionally change layouts using PHP code.http://wpsites.net/web-design/change-layout-based-on-any-conditions/
