    Is it possible to show just the YEAR a post was published, rather than the full date (in the entry meta)?

    Yes, you can filter the default output of the genesis_post_date_shortcode

    or

    You can change the date settings in WordPress > General settings.

    I wasn't sure how to filter the default output you mentioned, but it's okay! I did it through the general settings, creating custom date format. *duh*
