Hey there...trying to remove the line of text that appears in the Search box: "Search this website..." I had thought it was default for that widget but it appears StudioPress includes that text. I've looked and looked and looked and cannot find it anywhere! What php file do I need to edit?

You can use this sample in your functions.php file to change the search input text.
