Is it possible to use an image from the post instead of the featured image to appear on the recipe index page? https://souperdiaries.com/recipe-index/

    Yes.

    1. You can filter the function so it uses the id for the first image attachment from the post content rather than the featured image.

    Or

    2. You can add a custom image upload field and use it exclusively on your recipe index page.

Which method is easier and how is it done?

Neither coded solutions are easy as you need custom code written specifically for this purpose.

Another option is to find and install a 3rd party plugin ( widget ) which enables you to choose a custom image for use in the widget which is different to what is used on archives. Search the WordPress plugin repo for this.
