    I added a category.php file to my child theme. Everything works correctly with my custom after_header function and my custom loop function.

    I add_action( 'genesis_loop', 'be_custom_loop' );
    remove_action( 'genesis_loop', 'genesis_do_loop' );

    but then

    genesis();

    to close the file out. This then shows all the posts in the category again on the page.

    I have two solutions:
    1) is to find out why this is happening and get the posts to not show again - its something in the genesis() that runs it along with the sidebar and footer

    2) I could leave the posts coming from the default loop and remove my custom loop. My goal anyways is to style the post excerpt data from the loop with a custom style and template I use on my custom blog page
