Parallax-Pro->Excerpts->read more issue

Hi,
I am building a website using Parallax-Pro and would like to ask how to handle 'Read more' issue on a category page.

If I look at the category page, all the posts in it look like excerpts with pictures with no clear 'read more' link. The first post on the page uses <more> tag, so on a category page it looks like a single paragraph with a clickable title. The second post on a page uses the excerpts limit of 300 characters, and it finishes with [...] non-clickable thing. I don't like it either way.

Could you please advise how to make it with a nice "Read more" link?

I tried to add code snippets recommended on this website. Added them to functions.php with no visible result.

What do you have selected under Genesis > Theme Settings > Content Archives? If you've selected excerpts, change it to content and add a content limit.

I've also tried the following in functions.php, which also did not work:

add_filter('excerpt_more', 'get_read_more_link');
add_filter( 'get_the_content_more_link', 'get_read_more_link' );
function get_read_more_link() {
return '[Read more]';
}

Why is the above and Victor's code not working?
