I have an established blog with recipes and information posts. I am working to upgrade it to Foodie Pro using the Genesis Framework. I am wanting to reorganize my Categories. Wanted to see if anyone here knew of a good plugin to do this with?

What do you mean by "reorganize" your categories?

I created some main categories and wanted to update posts in bulk that go with each of the main categories.

You can do that in the Posts area. Start with the first category you want by going to Posts, check off each post you want to update into a new category. Then click the Bulk button and select Edit. The edit window will open and you can place all of the ones you want into a new or updated category.

Or maybe try this plugin. I've used it once where you can update everything via a spreadsheet in the dashboard. I tend to use my previous succession so I don't have a lot of plugins.
