I am using Brunch Pro here:

And I am trying to make the logo as large as possible, without sacrificing the mobile compatibility.

The theme currently recommends 640x300.

Can you tell me the "safest" size I can increase to?

There is no "safest" size. You can use any size you want. You may have to adjust the mobile CSS, but you can go as wide as full screen if you'd like. This is the process to follow: https://victorfont.com/change-logo-size-in-genesis-themes/
