Are any icon fonts such as Font Awesome or Glyphicons etc included in Genesis? How can these be used?

It's not included, so you have to add manually. I faced the same problem last time, so I wrote in my blog so that I can also remember :), check out here http://siam.naulak.com/use-fontawesome-wordpress-genesis-frameowrk/

    Hi,

while there is nothing wrong with siamnaulak's method, I would recommend to use fontawesome's CDN to speed up delivery of the font:
    http://fontawesome.io/get-started/
Sign up and add the script to Genesis - Theme Settings - Header & Footer Scripts - Header Scripts.
Even better would be to enqueue it in functions.php.
