    I'm using the Sample Child Theme and I'm wondering how to get a background color for just the header that spans all the way across the page... any help would be appreciated! The site is at alwayslookagain.com - I want a strip of white as the background for the header and going all the way through to the edges of the page.

    You can add background: #fff; to this section...

    #header {
    margin: 0 auto;
    min-height: 125px;
    width: 100%;
    }

    I have tried that; I have it edited that way right now with no dice :/

    I still see this in your CSS:

    #header {
    margin: 0 auto;
    min-height: 125px;
    width: 100%;
    }

    You need to add background: #fff; to make the background white.  It should look like this:

    #header {
    background: #fff;
    margin: 0 auto;
    min-height: 125px;
    width: 100%;
    }

    Are you using the custom header feature?  And does your header image have a transparent background?
