I would like to adjust my line height for the text in my blog posts so that it is 1.625 rather than 1.8. I have attempted to do this in the CSS, however, I am having trouble changing the height for body text in posts only, rather than text on the whole site. Any guidance is appreciated!

You have the font-size embedded in span tags surrounding all the individual lines of text in your posts. This is unnecessary and is probably the reason you can't change the line-height. You should be using CSS classes instead, not embedded CSS. Each of your paragraph tags has a bottom margin of 27px, which also contributes to being unable to change the line height. Truthfully, the way you have the CSS embedded in your posts, makes things so messy, I don't know that you'll be able to accomplish what you want until you clean it all up.
