Hi - I am very technically challenged, but I managed to put a blog together using the Prose theme several years ago. (I purchased this theme b/c it was recommended for non techies/coders.) So I don't know any code or how or where to go to change it.

I really like the way the header goes across the entire width, but it gets cut off on mobile devices.

I purchased all the themes recently to play around with and to see which I would like best, but every one I try has a very small header image area and I don't have a clue as to how I might change that.

I love the clean look of Eleven40 but will I be able to make my header look like it does now with Prose? Thanks for any advice.

If you don't use the header-right widget area, the header stretches across the page. You may have to change the size of the logo in functions.php. Since you are not comfortable with coding, you should probably consider hiring a developer to help you.
