I would like to create pages that mimic the home page on the new Education Pro theme. Basically I would like to create full width content with pictures or call to action boxes on a standard page or landing page. If this box can be placed between the regular header and standard page, that would be great. I would like to create multiple pages.

I'm going for a look like the new Lewis Howes site.

My test site page is http://johnwrichardson.com/test-landing

I tried using Custom Header Extended but it didn't work with this version of the theme.

Use the StudioPress tutorial on creating widgets. You can make widgets page specific, or site-wide.
