I do not want my posts on the Blog page to start off with an image I have included in the post. How do I prevent that?

Don't add a image in the post editor before the content.

Got it, thank you very much. One more question I haven't been able to get answered yet while I have you:

I want my blog posts to appear as previews (short versions of the post) on the Blog page, rather than the whole post. Is there a setting for that?

Did you try the Genesis > Theme Settings > Content Archive settings?
