    I'm using Aspre Pro and Lifestyle Pro and do not see Entry Schema as described on:
    https://my.studiopress.com/documentation/genesis-simple-schema/usage/adding-schema-to-posts/

    I'm currently using Microdata Manager plugin that's no longer supported on some of my sites and would like to exchange it for a supported plugin.

    I would like to be able to customize different post and pages.

    If this is no longer supported what are other options?

    You can modify default schema using code.

    Example:

    add_filter( 'genesis_attr_content', 'genesis_attributes_content' );
    
    function genesis_attributes_content( $attributes ) {
    
    	return $attributes;
    
    }
    

    You'll find all the filters in genesis > lib > functions > markup
