Can you edit the individual Genesis child themes using the Dynamik Website Builder? I love the framework Genesis offers but I'm not much or a coder for CSS, HTML and PHP.

No you cannot. http://dynamiktheme.com/faq/ But you can create new layouts with it.

Or if you want you can make changes to many existing child themes with their Genesis Extender plugin http://genesis.extenderplugin.com/

For the virtually "no-coder" I am finding that Genesis Prose with the Extender plugin is a very good setup.
