How can I display custom post types and custom taxonomies in featured post widget?

You can't unless you create your own version of the widget. The value of 'post' is hardcoded into the featured post widget. It's designed to show posts by category, not custom post types.

Luckily, there's already a version of the featured post type widget in the WordPress repository that supports custom post types. https://wordpress.org/plugins/genesis-featured-widget-amplified/
