I just read that any customizations made to the functions.php file will be overwritten after any Genesis child theme update.

    Is this true?

If it is true, then should I be using one of the following plugins: Genesis Extender or Code Snippets?

How do you all go about addressing this?

    Thanks

Child themes are never updated automatically, only the framework received auto-updates.

If a new version of a child theme is ever updated, you'll have to compare the changes against your child theme manually and decide if it's actually worth upgrading or not.

    Thanks Victor.

I guess I could do that using my local dev environment which is DesktopServer and compare that to the live site.

Each child theme comes with a Changelog that tells you what has been updated. Use that as your guide.
