I read Nick's post about creating custom page templates: http://designsbynickthegeek.com/tutorials/creating-page-templates-in-genesis. Can the same be done for creating custom post templates?

You can convert page templates to post temples using a plugin or try this http://wordpress.org/plugins/single-post-template/
